I know, I know I’m always a little late with the posts and Valentines Day passed; but, I finished this wonderful cookies late last night and I was to tired to write a post after that .
It doesn’t matter what cutters do you use, the recipe is very easy to make and they are very tasty and fluffy inside . Together with the royal icing decoration they become so adorable and you will not be able to stop eating them. 🙂
Ingredients:
- 195 gr flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 113 gr butter
- 100 gr sugar
- 1 egg , lightly beaten
- 1 teaspoon vanilla essence
Directions:
- In a bowl whisk together the flour, salt, and baking soda and set aside
- In the bowl of your mixer beat the butter and sugar until light and fluffy (about 3 to 4 minutes).
- Add the beaten egg and vanilla extract and beat until combined.
- Add the flour mixture and beat until you have a smooth dough.
- Wrap the dough in plastic wrap and refrigerate for about one hour until firm enough to roll
- Preheat oven to 177 degrees C and place rack in the center of the oven. Line two baking sheets with parchment paper.
- Remove the chilled dough from the refrigerator and, on a lightly floured surface, roll out the dough to a thickness of 6 cm. (Keep turning the dough as you roll, making sure the dough does not stick to the counter.) Cut out shapes using a lightly floured cookie cutter and transfer cookies to the prepared baking sheet.
- Bake cookies for about 8-10 minutes or until they are just beginning to brown around the edges. Remove from oven and let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to finish cooling.
- Frost with royal icing and sparking sugar, if desired. Be sure to let the royal icing dry completely before storing. (This may take several hours.)
Royal Icing :
- 2 egg whites
- 450 gr confectioners sugar
- lemon juice
- 1 teaspoon vanilla essence
Directions:
- Put the Egg withes in and add 2/3 sugar about 300 gr . Start mixing it on low speed to get it all incorporated and after this we increase the speed for 10 minutes.
- Add the rest of the sugar on low speed and then on medium until everything is well combined,
- We add 5 drops of lemon juice to have a nice glossy look.
- If you want to be thicker add more confectioners sugar and if you want to have it a little thinner add more lemon juice.
